This super-delicious, super-satisfying superfood smoothie is one of our no-fail favorites. Pro tip: Busy week? Make the full batch, then save and refrigerate half for tomorrow (for the perfect healthful meal on the go).
1/2 cucumber, seeded and unpeeled
½ avocado, cubed
¼ cup raspberries
1 ½ cups coconut milk (or any non-dairy milk)
1 ounce (about 1 cup) stemmed and torn collard greens
2 tablespoons almond butter
1 teaspoon spirulina
1 teaspoon matcha tea powder
½ teaspoon lemon juice (optional)
1. In a blender first add cucumber, avocado, and berries followed by remaining ingredients.
2. Blend in stages using the pulse function until desired consistency is reached, scraping down the sides as necessary.
3. Enjoy immediately or refrigerate up to two days. Some separation may naturally occur if allowed to sit.
